Asparagus With Shells
(adapted from Asparagus Manicotti)

INGREDIENTS:

2 boxes pasta shells

6 tablespoons butter

4 tablespoons olive oil

4 garlic cloves, grated

4 cups heavy cream
-
Black pepper
-
1 cup Parmesan cheese
-
1 cup Mozzarella cheese

30+ Asparagus stalks
DIRECTIONS:

Prep the asparagus by removing the woody ends and cut into 1/4 inch pieces

Cook the shells in a large pot of boiling salted water until slightly softened, but still very firm to the bite, about 8 minutes. Drain and set aside.

Meanwhile, melt butter in medium saucepan with olive oil over medium heat. Add the garlic, cream, pepper and bring mixture to a simmer stirring often. Add the cheeses and simmer sauce for 4 minutes. Add in the asparagus pieces and continue to stir and simmer until sauce has thickened and is smooth (about 4 minutes)
