Asparagus With Shells

(adapted from Asparagus Manicotti)

 

Total Time: 30 minutes

Servings: 8

INGREDIENTS:

  • 2 boxes pasta shells

  • 6 tablespoons butter

  • 4 tablespoons olive oil

  • 4 garlic cloves, grated

  • 4 cups heavy cream

  • Black pepper

  • 1 cup Parmesan cheese

  • 1 cup Mozzarella cheese

  • 30+ Asparagus stalks

DIRECTIONS:

  1. Prep the asparagus by removing the woody ends and cut into 1/4 inch pieces

  2. Cook the shells in a large pot of boiling salted water until slightly softened, but still very firm to the bite, about 8 minutes. Drain and set aside.

  3. Meanwhile, melt butter in medium saucepan with olive oil over medium heat. Add the garlic, cream, pepper and bring mixture to a simmer stirring often. Add the cheeses and simmer sauce for 4 minutes. Add in the asparagus pieces and continue to stir and simmer until sauce has thickened and is smooth (about 4 minutes)

  4. Mix in shells.
