Gigi's Burnt Sugar Cake

INGREDIENTS:

  • 1/2 cup white sugar

  • 1/2 cup hot water

  • 1/2 cup butter

  • 1 1/2 cup sugar

  • 1 cup cold water

  • 2 1/2 cups flour

  • 2 egg yolks

  • 2 tsp baking powder

  • 1 tsp vanilla

  • 2 white of eggs

For the Caramel Icing:

  • 1/2 cup butter

  • 1 cup brown sugar, firmly packed

  • 1/4 cup milk

  • 1 3/4 -2 cups sifted confectioners Sugar

DIRECTIONS:

  1. Preheat oven to 350 degrees. Grease and flour 2- 9in round cake pans

  2. Place 1/2 cup sugar into a saucepan. Cook over medium heat, stirring constantly until sugar becomes dark brown and starts to smoke. Remove from heat. Slowly add 1/2 cup of hot water stirring constantly, then add 1 cup cold water. Let cool.

  3. Cream butter and sugar. Add beaten egg yolks. Add sugar and water mixture to the butter, sugar and egg yolks. Add vanilla and stir. Sift flour and baking powder together and slowly add to the wet mixture. Stir well.

  4. Beat egg whites until stiff and fold into mixture.

  5. Pour into prepared pans and bake. Test with toothpick.

  6. Cool and ice with caramel icing

 

For the Caramel Icing:

  1. Melt butter in a saucepan and add brown sugar. Cook over low heat for 2 minutes stirring constantly.

  2. Add milk to a saucepan and continue to stir until the mixture comes to a boil.

  3. Add confectioners sugar until right consistency to spread
